More about Jean Philippe Patisserie:You MUST see the somewhat disconcerting fountain of chocolate as well as the other incredible edible treats. (The crepes are a bit pricey, but well worth it. I recommend the sugar crepe with chocolate gelato on the side.) But the whole reason to head down the hallway to the left of the Bellagio Garden atrium and into the base of the Spa Tower is to see a unique work of 3 dimensional art at Jean-Philippe Patisserie.Here you will find a floor to ceiling cascade of melted chocolate. It's the tallest chocolate fountain in the world (so far). The entire mechanism is 27 feet tall with 14 feet of it being visible to the general public. Me, I want the behind the scenes tour when they offer it. But I digress. It took a year and a half to design, plan and build. (Designed by pastry chef Jean-Philippe Maury, and Norwood and Antonia Oliver Design Associates, Inc.) The 25 half inch thick glass suspended saucers were designed by Montreal glass artist Michael Mailhot. Two, count 'em, two tons of melted chocolate (milk chocolate, dark chocolate and white chocolate) circulate 24 hours a day at a rate of 120 quarts per minute at around 120 degrees Fahrenheit. Willy Wonka wishes he had it so good. Be warned they close quite early for a dessert place in Las Vegas. I sometimes don't get the sugar cravings until well after midnight and alas they are closed. They are only open until 11 PM and Midnight on Fridays and Saturdays. But you can see the glass enclosed chocolate fountain 24 hours a day.
